Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare 12 artichokes as described in a previous recipe.

  2. In a saucepan, melt 2 tablespoons of butter and lightly fry the chopped onion.

Make the filling

  1. Add the chopped veal, cooked artichoke bottoms, bread crumbs, parsley, chives, salt, pepper, and reduced Allemande sauce to the saucepan and mix well.

  2. Stuff the artichokes with the mixture and sprinkle additional bread crumbs on top.

Bake and serve

  1. Arrange the stuffed artichokes in a buttered pan, placing a small piece of butter on each.

  2. Bake in a hot oven at 400°F (200°C) until golden.

  3. Serve with reduced Madeira wine sauce, adding fine herbs if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the savoury, meaty body that fills out the stuffing.
Artichoke bottoms
Add tender texture and the delicate flavour that matches the artichoke.
Bread crumbs
Bind the filling and absorb juices, keeping it moist rather than loose.
Butter
Adds richness and helps the top and pan surfaces brown.
Reduced allemande sauce
Binds the filling and adds a rich, creamy depth of flavour.

The step that matters

Bake until golden. Baking in a hot oven browns the bread crumbs and butter on top. Too little heat leaves the filling pale and soft, while overbaking can dry the crumbs and toughen the stuffing.

Swap the onion
