What each ingredient does

Onions
Frying until light brown adds sweetness and savory browned flavor to the sauce.
Vinegar
Reduced by two-thirds, it adds acidity that brightens the sauce.
Espagnole sauce
Provides the body and rich savory flavor of the braise.
Butter
Fat that melts and fries the onions, carrying flavor and promoting browning.

The step that matters

Reducing the vinegar by two-thirds. Vinegar must cook down until most of its liquid evaporates so its sharp acidity mellows and concentrates. Stopping early leaves the sauce sharp and thin, while over-reducing can make it overly sour and syrupy.

Swap the beans

How well each one fits the dish's main ingredients (onion, butter, vinegar, sauce, pepper):

  1. Sesamefits better
  2. Black-eyed peafits about as well
  3. Beansthe original
  4. Soybeanfits about as well

Fit is the average pairing score against onion, butter, vinegar, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
