What each ingredient does

Cabbage
Forms the bulk of the dish and, slowly cooked, becomes tender and mild while absorbing the braising liquid.
Quails
Provide the main meat, which stays moist when gently braised among the cabbage layers.
Smoked sausages
Add smoky, savoury flavour that seasons the cabbage as it cooks.
Parboiled bacon
Adds salty, savoury fat that flavours the cabbage and the meat during slow cooking.
Carrots
Add natural sweetness that balances the savoury cabbage and pork.
Onions
Add sweetness and aroma as they soften and perfume the braising liquid.

The step that matters

Cook slowly for 1.5 hours. Bringing the pan to a boil and then reducing the heat keeps the braise at a gentle simmer. Gentle heat tenderises the cabbage and quail without toughening the meat or breaking down the layers.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, nutmeg, quail, carrot, onion, clove, pork):

  1. Capsicumfits better
