What each ingredient does

Cauliflower
Forms the main body of the dish, providing the vegetable base that the coating surrounds.
Villeroi sauce
Thick sauce that clings to the cauliflower and forms a first layer that helps the breading adhere.
Fresh bread crumbs
Form the crisp outer crust that browns when fried.
Beaten eggs
Bind the second bread crumb coating so it sticks firmly during frying.
Lard
Fat for frying that conducts heat and browns the crumb coating.

The step that matters

Let the sauce set before breading. Resting the Villeroi-coated cauliflower in a cool place lets the sauce firm up and adhere. If it is not set, the crumbs can slide off or the coating can break apart in the hot fat.
