What each ingredient does

Celery
Provides the main celery flavor that infuses into the vinegar over time.
Celery seed
Adds concentrated celery aroma and a warm, slightly bitter note.
Vinegar
Acts as the solvent that extracts and carries the celery flavor, and gives the acidity.
Powdered white sugar
Adds a little sweetness to balance the sharpness of the vinegar.

The step that matters

Pour the vinegar hot over the mixture. Hot vinegar extracts flavor from the celery and seeds more quickly and fully than cold vinegar would. Sealing the jar while it steeps keeps the aromatics from escaping, so the flavor develops over the full two weeks.

Swap the celery

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Cinnamonfits better
  2. Tarragonfits better
  3. Peppermintfits better
  4. Celerythe original

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
