What each ingredient does

Ground coffee
Supplies the flavor compounds that hot water extracts during steeping.
Boiling water
Dissolves flavor compounds from the grounds, and its heat speeds extraction.

The step that matters

Keep the pot warm without boiling the coffee. Boiling can over-extract the grounds and scorch the brew, making it taste bitter. Holding it just below boiling keeps the flavor balanced while it steeps.
