Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn
Forms the bulk of the fritter, providing sweetness and the main texture.
Eggs
Bind the batter together and help the fritters hold their shape while frying.
Flour
Thickens the batter so the corn stays suspended and the fritters hold together.
Cream
Adds moisture and richness to the corn, keeping the filling tender.
Lard
Conducts heat for frying and browns the outside of the fritters.

The step that matters

Simmer the corn until the moisture is reduced. Corn releases water as it cooks. If the corn is left wet, the batter becomes thin and the fritters can fall apart or steam instead of browning in the hot fat.

Swap the parsley

How well each one fits the dish's main ingredients (corn, cream, pepper, sugar, flour, milk, egg):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Cardamomfits better
  4. Parsleythe original

Fit is the average pairing score against corn, cream, pepper, sugar, flour, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
