  1. Pare the cucumbers. Slice small ones and split large ones in half, then scoop out the seeds and slice them thin.

  2. Place the cucumbers in an earthen bowl and sprinkle with coarse sea salt. Mix well.

Salt and drain

  1. Set the bowl in a cool place for 1 hour. Afterward, drain off the water, pressing the cucumbers gently.

Season and serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the crisp, watery bulk of the salad once salted and drained.
Coarse sea salt
Draws water out of the cucumbers, concentrating their flavour and firming their texture.
Olive oil
Adds fat that carries flavour and coats the cucumber slices.
Vinegar
Adds acidity that brightens the dressing and balances the salt.

The step that matters

Draining the salted cucumbers. Salt pulls water out of cucumber through osmosis. Draining off that liquid and pressing gently keeps the salad from becoming watery and diluting the dressing.

  1. Capsicumfits better
