What each ingredient does

Cucumbers
Provide the main vegetable; salting draws out water so they stay crisp in the brine.
Coarse sea salt
Draws water out of the cucumbers through osmosis, firming their texture and seasoning them.
Vinegar
Provides the acidity that preserves the cucumbers and gives them their sharp, tangy flavour.
Peppercorns
Add a pungent, aromatic spice flavour to the pickling liquid.
Bay leaves
Add a subtle herbal aroma to the pickled cucumbers.

The step that matters

Salting and standing the cucumbers. Salt must be spread evenly and the cucumbers turned during the 10 hours so water drains uniformly and they firm up. Uneven salting or draining leaves soft, watery pieces that spoil or pickle unevenly.
