Ingredients
Directions
Trim and wash the endives, separate the leaves, and place them on a napkin to absorb moisture.
Put the leaves in a salad bowl and season with salt, pepper, olive oil, and vinegar.
Add the finely chopped tarragon and chervil.
Wrap the shallots in a towel and dip them in boiling water for 1 minute.
Immerse the shallots in cold water, wring them dry, and add to the salad, mixing gently.
Arrange the salad and top with sliced green bell peppers.
Garnish with hard-boiled eggs cut into quarters.
