Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onion
Softens and sweetens as it fries, building the base flavour of the sauce.
Mushrooms
Release moisture that cooks off, concentrating their earthy flavour in the sauce.
Allemande or espagnole sauce
Forms the body of the sauce, providing thickness and savoury depth.
Parsley
Adds fresh, green aroma and flavour just before serving.

The step that matters

Reduce the mushroom moisture. If the mushrooms are not cooked until their liquid has evaporated, that water dilutes the sauce and keeps it thin. Cooking them uncovered at the end of the covered stage lets the moisture escape and the flavour concentrate before the base sauce is added.

Swap the parsley

How well each one fits the dish's main ingredients (onion, butter, mushroom, sauce):

  1. Garlicfits better
  2. Capersfits better
  3. Thymefits better
  4. Parsleythe original

Fit is the average pairing score against onion, butter, mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
