Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lentils
Provide the main body and texture of the dish.
Onion
Browns slowly to add sweetness and savoury depth to the sauce.
Butter
Adds fat and richness, carrying the flavour of the onion.
Flour
Thickens the butter and onion mixture to give the sauce body.

The step that matters

Cooking the onion until nicely browned. Browning develops sweet, savoury flavours through the Maillard reaction. Cooking too fast can scorch the flour and onion, leaving a bitter taste, so the heat should stay gentle.
