What each ingredient does

Lettuce
Forms the main body of the dish and becomes tender through slow braising.
Fat pork
Lines and covers the lettuce, adding fat and savory flavor during braising.
Stock broth
Provides the liquid that moistens the lettuce and carries flavor as it braises.
Half glaze
Adds concentrated savory flavor and body to the finished glazed lettuce.
Onions
Contribute aromatic sweetness and flavor to the braising liquid.

The step that matters

Press each head to remove excess water. Lettuce holds a lot of water, and leftover moisture dilutes the braising liquid and the glaze, leaving the dish watery rather than richly flavored.

Swap the onion
