Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Puree of Mushrooms
Ingredients
Directions
Prepare the puree
Wash and clean the mushrooms.
In a saucepan, combine mushrooms, butter, and lemon juice. Cook over medium heat, stirring occasionally, until moisture is reduced.
Transfer mushrooms to a mortar and pound them finely, then return to the saucepan. Add the Allemande or Cream sauce, season with salt, pepper, and nutmeg, and simmer for 15 minutes.
Rub the mixture through a fine sieve into a flat saucepan.
Finish and serve
Reduce the puree with ½ cup of cream.
Before serving, stir in a piece of butter and heat until just below boiling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mushrooms
- Form the bulk of the puree and release moisture that must be cooked off.
- Butter
- Adds richness and a silky mouthfeel to the mushrooms.
- Allemande or cream sauce
- Adds body and creaminess, helping the puree hold together.
- Cream
- Adds richness and smoothness, and thickens as the puree reduces.
The step that matters
Cooking off the mushroom moisture. Mushrooms release a lot of water. If they are not cooked until the moisture is reduced, the puree will be thin and watery and will not thicken properly when reduced with cream.
Flavor stand-ins for the lemon

Fit is the average pairing score against mushroom, butter, cream, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
