What each ingredient does

White onions
Supply the flavour that infuses into the vinegar during the two-week steep.
Wine vinegar
Acts as the base liquid, carrying onion flavour and providing the sharp acidity.
Coarse sea salt
Draws moisture out of the onions and seasons the vinegar.

The step that matters

Pouring the boiling vinegar over the onions. Heat softens the onion and helps its flavour release into the vinegar. Keeping the jar covered holds in aromatic vapour, and the two-week rest lets the flavour develop fully.
