Potato Crusts

Ingredients

Directions

  1. Prepare the potatoes as described in No. 1185.

  2. Grease a square tin pan and fill it with the potatoes, smoothing the top evenly.

  3. Cover with buttered paper and let cool.

  4. Once cold, turn out onto a table and cut out rounds using a cutter the size of a dollar.

  5. Roll the rounds in fresh bread crumbs, dip in beaten eggs, and bread them again.

  6. Shape them nicely and make an impression on top with a cutter the size of a quarter.

  7. Fry in hot lard until nicely colored, then drain.

  8. After a few minutes, remove the top and scoop out the center without damaging the shell.

  9. Fill with your desired filling.
