What each ingredient does

Rice
Starch that swells and thickens the broth as it cooks, giving the soup body.
Broth
Forms the liquid base and carries the flavour of the whole soup.
Leeks
Add a mild onion-like aroma and sweetness to the broth.
Parsley
Bundled as a faggot, it perfumes the broth with a fresh, herbal aroma.

The step that matters

Drain the rice dry after the cold-water immersion. Rice that stays wet dilutes the broth and can turn gummy or cloudy, so draining it well keeps the soup clear and the grains distinct.

Swap the parsley

How well each one fits the dish's main ingredients (rice, leek):

  1. Turmericfits better
  2. Capersfits better
  3. Celeryfits better
  4. Parsleythe original

Fit is the average pairing score against rice, leek. Candidates are from the same food group and used in at least 100 recipes.
