Why it works: Tomato and pepper are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,923 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ripe tomatoes
- Provide the main body, flavour and natural pectin that the puree thickens around.
- Worcestershire sauce
- Adds savoury, tangy depth and salty umami to the ketchup.
- Wine vinegar
- Adds acidity that brightens the flavour and helps preserve the ketchup.
The step that matters
Reducing the puree to the desired consistency. Cooking the puree slowly drives off water, concentrating flavour and thickening it. Stopping too early leaves it thin, while overcooking makes it dense and sticky, so check the texture as it cooks.
Swap the tomato
How well each one fits the dish's main ingredients (pepper, sauce, wine, vinegar):
- Capsicumfits about as well
- Tomatothe original
- Mustardfits about as well
- Shallotfits about as well
Fit is the average pairing score against pepper, sauce, wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
