Why it works: Almond and turnip share more aroma than cooks usually use. They rank in the top 8% of all ingredient pairs, and cooks put them together in 54 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pectoral Broth, with Turnips

Ingredients

Directions

Make the broth

  1. In a saucepan, combine cold water, veal shin, lungs, and shelled almonds.

  2. Bring to a boil and simmer until the broth reduces to half its original quantity.

  3. While the broth reduces, peel the turnips, wrap them in cooking paper, and bake until done.

  4. Remove the papers from the turnips and add them to the broth.

  5. Continue to reduce the broth to one quarter of its original quantity.

Finish and serve

  1. Strain the broth, return it to the saucepan, and add rock candy and white powdered gum.

  2. Keep the broth warm and serve as needed.

What each ingredient does

Veal shin
Releases gelatin and savory flavor into the broth as it simmers.
Turnips
Add mild sweetness and a tender, soft texture to the broth.
Rock candy
Adds sweetness to balance the savory broth.
Shelled almonds
Contribute a mild nutty aroma and richness to the broth.

The step that matters

Reducing the broth to one quarter. Reducing concentrates flavor and body, but over-reduction can make the broth too salty or syrupy and can scorch it on the bottom. Keep the heat at a gentle simmer and watch the volume closely.

Swap the almond

How well each one fits the dish's main ingredients (veal, turnip):

  1. Lentilsfits better
