Why it works: Turnip and artichoke match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 140 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Macedoine Vegetable Salad
Ingredients
Directions
Cook the vegetables as described in Macedoine Garniture, No. 1688.
Cut the cooked vegetables into desired shapes using fancy cutters.
Keep each type of vegetable separate and drain them.
Season the vegetables with salt, pepper, olive oil, and vinegar.
When ready to serve, mix the vegetables and dress them in a salad bowl with Ravigote or Mayonnaise sauce.
For a large salad, dress each vegetable in bunches, alternating them for a pleasing effect.
