What each ingredient does

Wheat
Forms the body of the broth as its starch softens and thickens during simmering.
Veal broth
Provides the liquid base and the savory flavor the wheat absorbs as it cooks.

The step that matters

Parboiling the wheat. Parboiling briefly softens the grain's outer layer and removes surface residue, so the wheat cooks evenly and the broth stays clean. Draining well before adding the broth keeps the flavor clear.
