Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Stuffed Artichoke Bottoms, Italian Style

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the artichokes by removing the leaves and trimming the bottoms.

  2. Mix the forced meat with cooked fine herbs.

  3. Stuff each artichoke bottom with the meat mixture.

Assemble and bake

  1. Sprinkle fresh bread crumbs over each stuffed artichoke.

  2. Drizzle a few drops of sweet oil on top.

  3. Place the artichokes in a pan and cover with light Espagnole sauce.

  4. Bake in a 300°F (150°C) oven until nicely browned.

Finish and serve

  1. In a separate bowl, combine the sauce with butter, lemon juice, and chopped parsley.

  2. Serve a teaspoon of the sauce over each artichoke and the rest separately.

What each ingredient does

Artichokes
Provide the edible bottoms that hold the stuffing and carry the dish.
Forced meat of chicken or veal
Supplies the savoury filling that becomes firm and moist when baked.
Fresh bread crumbs
Form a crisp, golden topping that browns in the oven.
Light espagnole sauce
Moistens the artichokes during baking and forms the base of the serving sauce.
Butter
Adds richness and fat that carries flavour in the finishing sauce.
Lemon juice
Adds acidity that brightens the rich sauce and balances the fat.

The step that matters

Baking until nicely browned. Baking at a low 300°F gives the meat and crumbs time to cook through and brown gently. Too little time leaves the filling underdone, while too much heat or time can dry the stuffing and scorch the crumbs.
