What each ingredient does

Artichokes
Form the main body of the soup and give it its characteristic flavor.
Butter
Adds richness and fat, and helps the artichokes take on a light color when cooked.
Onions
Add savory sweetness and aroma to the broth as it cooks.
Thickened chicken or veal broth
Provides the liquid base and savory body of the soup.

The step that matters

Straining through a fine sieve. Straining removes fibrous artichoke bits and cooked-down solids, giving the soup a smooth texture. Skimming first removes fat and foam that would otherwise cloud the finished soup.

Swap the onion

How well each one fits the dish's main ingredients (artichoke, butter, pepper, sugar, parsley, chicken, bread):

  1. Shallotfits better
  2. Capsicumfits better
