What each ingredient does

Flour
Thickens the soup as it cooks with the barley and butter.
Pearl barley
Provides body and a chewy texture as it simmers in the broth.
Butter
Adds richness and fat, carrying flavour through the soup.
Egg yolks
Enrich and thicken the cream, giving the finished soup a smooth, velvety texture.
Cream
Adds richness and a silky mouthfeel to the finished soup.

The step that matters

Stirring the cream and egg yolks into the soup. Egg yolks can curdle if they get too hot. Strain the mixture and keep it warm rather than boiling, so the yolks thicken gently into a smooth finish.
