What each ingredient does

Cabbage
Forms the bulk of the dish and softens into tender strands as it cooks down.
Butter
Adds fat and richness, and carries the flavour of the onions into the cabbage.
Onions
Add sweetness and savoury depth as they soften and lightly brown in the butter.
Vinegar
Adds acidity that brightens the flavour and helps the cabbage keep its red colour.
Red wine
Adds moisture and acidity, and deepens the flavour as it reduces with the cabbage.

The step that matters

Cook slowly under cover until the moisture is reduced. Cabbage releases a lot of water. Cooking covered and slowly lets it soften gently, and the later uncovered reduction concentrates the flavour without the cabbage turning watery or scorching at the base of the pan.
