Why it works: Cauliflower and vinegar work together. They rank in the top 13% of all ingredient pairs, and cooks put them together in 888 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Cauliflower Pickled
Ingredients
Directions
Prepare the cauliflower
Pick and wash the cauliflower, then cut off 3 pounds of flowered buds and arrange them in small, equal-sized bunches.
Soak the bunches in a pan of cold water.
In a saucepan, bring lightly salted water to a boil and add the cauliflower.
Boil the cauliflower for 6 minutes, then drain.
Pickle
Place the drained cauliflower in an earthen jar and pour hot boiling vinegar over them.
Cover the jar and let it sit overnight.
The next day, drain off the vinegar, boil it again with a little salt, and pour it hot over the cauliflower in the jar.
Once cooled, cover the jar tightly and store it in a cool place.

What each ingredient does
- Cauliflower
- Forms the main body of the pickle and holds its crisp-tender texture after brief boiling.
- Vinegar
- Provides acidity that preserves the cauliflower and gives it its sharp, tangy flavor.
- Coarse sea salt
- Seasons the boiling water and the reheated vinegar, adding savoury flavour.
The step that matters
Pouring the hot vinegar over the drained cauliflower. The cauliflower must be drained well after boiling so excess water does not dilute the vinegar. Hot vinegar penetrates the florets more readily, helping the pickle absorb acidity evenly.
