Ingredients

Directions

Prepare the celery

  1. Cut celery into 6‑inch pieces.

  2. Parboil the pieces for 5 minutes.

  3. Immerse the pieces in cold water.

  4. Drain and dry the pieces.

Make the lemon flour liquid

  1. Bring 1 gallon of water to a boil in a saucepan.

  2. Dilute 3 tablespoons of flour in cold water.

  3. Add the flour mixture to the boiling water along with juice of 3 lemons and coarse sea salt to taste.

Can and process

  1. Clean each piece of celery in lukewarm water.

  3. Add juice of 1 lemon to each can.

  4. Seal the cans and boil in a hot water bath for 2 hours.

What each ingredient does

Celery
Forms the bulk of the preserve and provides its texture once cooked.
Flour
Thickens the boiling liquid so it coats the celery more evenly.
Lemon juice
Adds acidity, which brightens the flavour and helps keep the preserve stable.

The step that matters

Sealing and the hot water bath. Canned low-acid vegetables must be sealed airtight and held at a full boil for the full time to destroy spoilage microbes. Undercooking or a poor seal can leave the contents unsafe to store.
