Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pare and slice the cucumbers in half, then scoop out the seeds.

  2. Parboil the cucumbers for 2 minutes, then immerse them in cold water and drain on a napkin.

  3. Stuff the cucumbers with the forced meat and fine herbs.

Braise and serve

  1. Arrange the cucumbers in a deep, flat saucepan lined with thin slices of fat pork.

  2. Moisten with clear Espagnole sauce or veal gravy and cover each cucumber with a slice of fat pork.

  3. Cover the saucepan and cook in a 350°F (175°C) oven, basting occasionally.

  4. Once nicely glazed, serve with reduced Madeira wine sauce.

What each ingredient does

Cucumbers
Form the main body of the dish, becoming tender and mild when parboiled and braised.
Forced meat made from chicken breasts
Provides a rich, savory filling that sets firm as it cooks inside the cucumbers.
Thin slices of fat pork
Lines the pan and covers the cucumbers, adding fat that keeps them moist and flavorful.
Clear espagnole sauce or veal gravy
Moistens the cucumbers during braising and contributes savory depth to the glaze.
Madeira wine sauce
Adds sweetness and aromatic richness to the finished dish when served.

The step that matters

Covered braising with occasional basting. Cooking covered in moist liquid keeps the cucumbers from drying out, while basting spreads the liquid and fat over them so they glaze evenly rather than browning unevenly or toughening.
