Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the eggplants by cutting off the tops and hollowing them out.

Make the stuffing

  1. In a saucepan, melt the butter and lightly fry the chopped onions.

  2. Add the diced eggplant, shredded chicken, shredded pork, and marrow. Simmer for 20 minutes.

  3. Stir in the bread crumbs, season with salt, pepper, and nutmeg.

  4. Add the egg yolks and chopped parsley, mixing well.

Bake and serve

  1. Fill the hollowed eggplants with the stuffing mixture.

  2. Top with additional bread crumbs and a small piece of butter on each.

  3. Bake in a 350°F (175°C) oven until golden and serve with a reduced Madeira wine sauce.

What each ingredient does

Eggplants
Form the hollow shells that hold the stuffing while baking.
Egg yolks
Bind the stuffing so it holds together and sets lightly when baked.
Bread crumbs
Absorb moisture from the filling and help give it body.
Butter
Adds richness and helps the topping brown in the oven.
Marrow
Adds richness and a soft, savory texture to the filling.

The step that matters

Add the egg yolks and chopped parsley, mixing well.. Egg yolks set when heated, binding the stuffing. If the filling is too hot when they go in, they can scramble, so let it cool slightly and mix them in evenly.
