Endive Salad, American Style

Ingredients

Directions

  1. Trim and wash the endives, then separate the leaves and place them on a napkin to absorb moisture.

  2. In a salad bowl, season the leaves with salt, pepper, olive oil, and vinegar.

  3. Add the chopped tarragon and chervil.

  4. Chop the shallots, wrap them in a towel, and dip in boiling water for one minute.

  5. Immerse the shallots in cold water, wring them dry, and add to the salad, mixing gently.

  6. Arrange the salad, topping it with sliced green bell peppers and garnish with quartered hard-boiled eggs.
