Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Farina
Forms the firm cornmeal-style body that holds the tartlet's shape.
Parmesan cheese
Adds savory flavor and helps the filling and coating brown.
Bread crumbs
Form a crisp, golden outer crust when fried.
Eggs
Bind the bread crumb coating so it adheres to the tartlets.

The step that matters

Fry in hot lard until browned. If the lard is not hot enough, the coating absorbs fat and turns greasy instead of crisping. Fry only until golden, since the coating browns quickly and the filling is already set.
