Why it works: Shallot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,737 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Morels Stuffed

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the morels

  1. Wash and trim the morels.

  2. Parboil the morels for 15 minutes.

  3. Immerse the morels in cold water.

  4. Drain the morels on a napkin.

Make the stuffing

  1. Chop the trimmings and stems finely.

  2. Cook the chopped trimmings and stems in a saucepan with butter and shallots until moisture is reduced.

  3. Let the mixture cool.

  4. Add the cooked meat and parsley to the mixture.

  5. Stuff the morels with the mixture.

Bake and serve

  1. Sprinkle the stuffed morels with bread crumbs.

  2. Arrange the stuffed morels in a flat saucepan lined with pork slices.

  3. Place a small piece of butter on each morel.

  4. Moisten the morels with broth.

  5. Bake the morels at 300°F (150°C) until browned.

  6. Serve the morels with a reduced Madeira wine sauce.

  7. Sprinkle the dish with parsley.

What each ingredient does

Morels
Hollow caps hold the stuffing, and their earthy flavour anchors the whole dish.
Butter
Adds richness and helps the stuffing and morels brown in the oven.
Shallots
Provide a mild aromatic sweetness to the cooked stuffing base.
Cooked forced meat of chicken or veal
Gives the stuffing body, savoury depth and a firm, tender texture.
Fresh bread crumbs
Add structure to the stuffing and form a crisp, golden top.
Broth
Adds moisture so the morels do not dry out during baking.

The step that matters

Reducing the trimmings and stems until the moisture is cooked off. If the chopped mushroom mixture stays wet, it will make the stuffing soggy and stop the morels from browning well in the oven. Cooking it down concentrates flavour and gives a firm filling.

Swap the parsley

How well each one fits the dish's main ingredients (butter, shallot, meat, bread, pork, madeira wine, sauce):

  1. Capersfits better
  2. Thymefits better
  3. Parsleythe original
  4. Nutmegfits about as well

Fit is the average pairing score against butter, shallot, meat, bread, pork, madeira wine, sauce. Candidates are from the same food group and used in at least 100 recipes.
