Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the bulk of the puree, providing flavor and body once cooked down and pureed.
Butter
Adds richness and fat, carrying flavor and giving the puree a smooth mouthfeel.
Allemande or cream sauce
Adds body and creaminess, thickening the puree and softening its texture.
Cream
Enriches the puree and thickens it as it reduces over low heat.
Lemon juice
Adds acidity that brightens the mushroom flavor and helps keep it fresh-tasting.

The step that matters

Cook until moisture is reduced. Mushrooms release a lot of water. If they are not cooked down enough, the puree stays thin and watery and the flavor is diluted. Stirring keeps them from scorching.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (mushroom, butter, cream, pepper, nutmeg):

  1. Lemonthe original
  2. Coconutabout as good a flavor fit

Fit is the average pairing score against mushroom, butter, cream, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
