Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cepes (mushrooms)
The main ingredient; their moisture is reduced first so they brown rather than steam.
Heavy cream
Adds richness and moisture, and forms the creamy sauce as it cooks slowly.
Butter
Carries the cooking of the mushrooms and adds rich flavour and fat.

The step that matters

Reducing the mushroom moisture. Mushrooms release water as they heat. Tossing them until that liquid evaporates lets them brown and concentrates their flavour before the cream is added, so the sauce doesn't turn watery.

Flavor stand-ins for the fennel

How well each one fits the dish's main ingredients (mushroom, butter, pepper, parsley, cream):

  1. Thymebetter flavor fit
  2. Marjorambetter flavor fit
  3. Tarragonbetter flavor fit
  4. Fennelthe original

Fit is the average pairing score against mushroom, butter, pepper, parsley, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
