Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cook the rice as directed in previous recipes.

  2. Butter a border mold with clarified butter.

  3. Press the rice tightly into the sides and bottom of the mold.

  4. Smooth the top of the rice, cover with buttered paper, and place in a 350°F (175°C) oven for 15 minutes.

  5. Remove from the oven, set on the serving dish, and carefully lift off the mold after 5 minutes.

  6. Fill the center of the rice border with your desired filling.
