Timbals of Rice

Ingredients

Directions

Prepare the moulds

  1. Cook the rice until firm, as described in previous recipes.

  2. Butter the Timbals or Charlotte moulds with clarified butter and place them in a cool area to harden.

Line and fill

  1. Once the rice is cool, line the moulds with it, pressing tightly around the sides and bottom without disturbing any decorations.

  2. Fill the centers with a mixture of meats or purees.

  3. Cover the Timbals with a layer of rice, smoothing it evenly, and place a buttered paper cover on top.

Serve

  1. Keep the Timbals warm in the oven until ready to serve.

  2. To serve, run a knife between the mould and the Timbal to loosen it, then turn it out onto a serving dish.

What each ingredient does

Rice
Forms the shell that holds the filling and sets firm when cooked and cooled.
Clarified butter
Coats the moulds so the rice releases cleanly and adds richness.

The step that matters

Lining the moulds with rice. Rice must be cool and firm before lining, and pressed tightly, so the shell holds its shape when turned out and does not collapse around the filling.
