What each ingredient does

Spinach
Forms the bulk of the fritters and gives them their green flavor and body.
Egg yolks
Bind the mixture and help it set firm when fried.
Cream or allemande sauce
Adds moisture and richness, keeping the fritters tender.
Butter
Adds richness and flavor to the mixture.

The step that matters

Reducing the spinach mixture. Cooking the chopped spinach with the cream until reduced drives off excess water. If wet, the mixture will be too loose to hold its shape and may steam instead of frying crisp.
