Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body, moisture and tomato flavour of the ketchup.
Worcestershire sauce
Adds savoury, tangy depth and aroma to the sauce.
Wine vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.

The step that matters

Reducing the puree to the desired consistency. Cooking the puree down over heat evaporates water and concentrates the flavour and body. Stopping too early leaves it thin, while overcooking makes it dense and can scorch on the bottom of the pan.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, sauce, wine, vinegar):

  1. Capsicumfits about as well
  2. Tomatothe original
  3. Mustardfits about as well
  4. Shallotfits about as well

Fit is the average pairing score against pepper, sauce, wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
