Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the truffles into small pieces or slice them.

  2. Combine the truffles with the reduced Madeira wine sauce.

Fill and bake

  1. Butter the shells and fill them with the truffle mixture.

  2. Sprinkle fresh bread crumbs over the filled shells.

  3. Place a small piece of butter on top of each shell.

  4. Bake in a 400°F (200°C) oven until golden.

Serve

  1. Serve on a napkin.

What each ingredient does

Truffles
Provide the main earthy, aromatic flavour of the filling.
Reduced madeira wine
Adds concentrated sweetness and depth to the truffle filling.
Butter
Adds fat for richness and helps the topping brown in the oven.
Fresh bread crumbs
Form a crisp, golden topping over the filled shells.
