Stuffed Truffles

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Scoop out the centers of the truffles without damaging the sides and finely chop the scooped-out parts.

  2. Finely chop the shallots and cook them in a saucepan with butter until soft but not browned.

  3. Add the Madeira wine and chopped truffles to the saucepan.

  4. Cook until the moisture is reduced.

  5. Allow the mixture to cool.

  6. Mix in the forced meat of chicken or game.

Stuff and bake

  1. Stuff the truffles with the mixture.

  2. Arrange the stuffed truffles in a flat saucepan.

  3. Bake in a 400°F (200°C) oven for a few minutes until glazed.

  4. Serve with a reduced Madeira wine sauce around the dish.

What each ingredient does

Truffles
Form the main body of the dish and carry the flavor of the filling.
Shallots
Add aromatic sweetness and savory depth when softened in butter.
Butter
Softens the shallots and adds richness to the filling.
Madeira wine
Adds sweetness and depth, and reduces to a concentrated flavor for the filling and sauce.
Forced meat of chicken or game
Provides body and a savory, binding base for the stuffing.

The step that matters

Cook the Madeira mixture until the moisture is reduced. If liquid remains, the filling stays wet and loose, making it hard to stuff the truffles and prone to making them soggy. Reducing it concentrates flavor and gives a firmer filling.
