Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Hold their shape when cut and cooked, adding sweetness and colour to the mix.
Turnips
Add a firm, slightly sweet texture that holds up to glazing and cooking.
Butter
Adds richness and a silky mouthfeel when the vegetables are tossed in it.
Flageolet beans
Provide a tender, creamy texture that contrasts with the crisp-tender vegetables.

The step that matters

Boiling the carrots and turnips until tender. Denser root vegetables need enough time to soften fully, but overcooking makes them mushy and uneven. Cutting them to a uniform size and testing for tenderness helps them cook evenly and keeps them distinct when combined with the other vegetables.

Swap the nutmeg

How well each one fits the dish's main ingredients (carrot, turnip, beans, asparagus, pepper, sugar, butter):

  1. Parsleyfits better
  2. Celeryfits better
  3. Tarragonfits better

Fit is the average pairing score against carrot, turnip, beans, asparagus, pepper, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
