Vegetable Salads

Ingredients

Directions

  1. Wash and prepare all vegetables that can be eaten raw or cooked.

  2. Season with salt, pepper, olive oil, and vinegar.

  3. Dress endives and dandelion with a plain dressing and add garlic-rubbed bread.

  4. For corn-salad, dress with pickled beets.

  5. Add mustard dressing and Worcestershire sauce to celery if desired.

  6. Serve water-cress fresh and plain, excellent with roasted or broiled fowl.

  7. Do not dress lettuce until ready to serve; add fine herbs and hard-boiled eggs if desired.

  8. Mix young and tender vegetables in spring, ensuring they harmonize in taste and color.

  9. Sprinkle salt and pepper over the salad, or mix with oil before adding to the salad.
