Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the loaf

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the ground beef, beaten eggs, crushed soda crackers, softened butter, black pepper, coarse sea salt, milk, and any desired herbs. Mix thoroughly for 10 to 15 minutes, as you would for bread dough.

  3. Shape the mixture into a loaf about 2 inches thick.

Bake and serve

  1. Place the loaf in a baking pan and bake for 1.5 hours, adding water to the pan to prevent burning.

  2. Baste the loaf often during baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Provides the main body and rich, savory flavor of the loaf.
Eggs
Bind the meat together and help the loaf hold its shape when sliced.
Soda crackers
Absorb juices and add moisture, keeping the loaf tender rather than dry.
Butter
Adds fat for richness and a softer, more tender texture.

The step that matters

Mixing the meat mixture. Mixing for 10 to 15 minutes develops the protein network in the meat and binds the loaf, so it holds together when sliced. Overmixing can make the texture firm and dense, while undermixing can leave it crumbly.

Swap the sage

How well each one fits the dish's main ingredients (beef, egg, butter, pepper, milk):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Sagethe original

Fit is the average pairing score against beef, egg, butter, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
