What each ingredient does

Chestnuts
Add starchy body and a mild, sweet, nutty flavour to the stuffing.
Egg yolks
Bind the mixture and help it set firm when cooked.
Bread crumbs
Absorb liquid and give the stuffing bulk and a soft texture.
Sausage
Adds fat, savoury flavour and richness to the stuffing.
Butter
Adds fat and richness, carrying flavour through the stuffing.

The step that matters

Half-cooking the sausage. Sausage is only partly cooked before it goes into the bird, so it must be fried until half done and then cut. Stuffing cooks slowly inside the turkey, and the bird's cavity must reach a safe temperature, so the meat should not be raw going in.

Swap the onion
