Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they cook and give it a rich, smooth body.
Milk
Forms the liquid base that the egg yolks thicken into a sauce.
Sugar
Sweetens the sauce and helps the yolks stay smooth when beaten.
Vanilla
Adds aroma and flavor to the finished sauce.

The step that matters

Stirring the egg mixture into the boiling milk. Egg yolks can scramble if they get too hot too fast. Adding them to the hot milk and stirring constantly over the heat keeps the mixture smooth while it thickens.
