  2. Pour warm weak alum water over the rinds and let them stand for 24 hours.

  3. Soak the rinds until well cleansed.

  4. Boil the rinds in water until tender.

  5. Make a syrup with equal parts sugar and vinegar, adding cinnamon sticks for flavor.

  6. Boil the rinds in the syrup until they become clear.

  7. Pack the rinds into self-sealing jars.
