What each ingredient does

Cucumbers
Form the bulk of the pickle and provide its crisp, fresh texture.
Coarse sea salt
Draws water out of the vegetables, firming them and making the pickle drain.
White mustard
Adds sharp, pungent flavour that balances the sourness of the vinegar.
Cold vinegar
Provides acidity that preserves the pickle and gives it its tang.
White onions
Add sharpness and savoury flavour to the mixture.

The step that matters

Draining in the muslin bag. Salt draws water out of the cucumbers and onions. Draining for the full 24 hours removes excess liquid, so the pickle stays crisp and does not become watery in the jar.
