What each ingredient does

Maple sugar
Provides the sweet base that cooks into a firm, creamy sugar mass.
Butter
Adds fat that makes the cooked sugar smoother and more tender.

The step that matters

Stir rapidly until waxy. Stirring after removing from heat encourages many tiny sugar crystals to form, which gives a smooth, creamy texture. Stirring too early or too slowly can leave the mixture grainy or let it set in large crystals.

Swap the walnut

The recipe marks walnut as optional. How well each one fits the dish's main ingredients (sugar, butter):

  1. Almondfits better
  2. Pecansfits better
  3. Filbertfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
