Stuffed Leg of Mutton

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mutton

  1. Remove the first joint from the leg of mutton, or do it at home with a sharp knife close to the bone.

  2. Rub 1 tablespoon of coarse sea salt into the meat.

Make the stuffing

  1. In a bowl, mix 1 pint of bread or cracker crumbs with 1 tablespoon of salt and 1 teaspoon of pepper.

  2. Add the finely chopped onion, beaten egg, and 1 teaspoon of sage to the crumb mixture.

  3. Melt butter the size of an egg and pour it over the crumbs, adding more if needed to moisten thoroughly.

Roast and serve

  1. Stuff the mixture into the leg of mutton and tie it securely.

  2. Roast in a 350°F (175°C) oven, basting and dredging with flour as you would beef.

  3. Skim the fat from the gravy before serving.

What each ingredient does

Leg of mutton
Forms the main meat that carries the stuffing and gives the roast its body.
Bread or cracker crumbs
Absorb the melted butter and egg, giving the stuffing its bulk and a moist, soft texture.
Egg
Binds the crumb mixture so it holds together inside the meat.
Onion
Adds savory depth and aroma to the stuffing as it cooks.
Butter
Adds richness and moisture, helping the crumbs stay soft and flavourful during roasting.
Sage
Contributes a herbal, earthy aroma that complements the mutton.

The step that matters

Moisten the crumbs thoroughly before stuffing. Dry crumbs will pull moisture from the meat and stay gritty, while evenly moistened crumbs bind and steam within the roast, keeping the stuffing tender.

Swap the onion

How well each one fits the dish's main ingredients (mutton, bread, pepper, egg, sage, butter):

  1. Capsicumfits better
