What each ingredient does

Veal knuckle
Provides collagen and gelatin from bones and connective tissue that set the liquid into a jelly.
Black pepper
Adds mild heat and aroma to the seasoned meat.
Sage
Adds herbal aroma that complements the savory veal.

The step that matters

Boil until almost dry and difficult to stir. Reducing the liquid concentrates the dissolved collagen and gelatin so it will set firmly when chilled. Stopping too early leaves a loose jelly that will not hold its shape when sliced.

Swap the sage

How well each one fits the dish's main ingredients (veal, pepper, lemon, parsley):

  1. Marjoramfits better
  2. Thymefits about as well
  3. Sagethe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, pepper, lemon, parsley. Candidates are from the same food group and used in at least 100 recipes.
